Chuck Roast Deal

I have yet to get to the store this week to see how much the roasts are priced at. I’m guessing from $20+. Here are 3 Meal Ideas using this Meal Deal and a few others from this weeks Tops Markets weekly sales. You will find 3 different meal ideas and all the Deals at Tops for most of the ingredients below that.

 

Balsamic Braised Pot Roast Recipe

Ingredients

1 boneless beef chuck roast (3 to 4 pounds)
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
3 celery ribs with leaves, cut into 2-inch pieces
2 medium carrots, cut into 1-inch pieces
1 medium onion, coarsely chopped
3 medium turnips, peeled and quartered
1 large sweet potato, peeled and cubed
3 garlic cloves, minced
1 cup dry red wine or beef broth
1 can (14-1/2 ounces) beef broth
1/2 cup balsamic vinegar
1 small bunch fresh thyme sprigs
4 fresh sage leaves
2 bay leaves
1/4 cup cornstarch
1/4 cup cold water

Directions

Preheat oven to 325°. Sprinkle roast with salt and pepper. In a Dutch oven, heat oil over medium heat. Brown roast on all sides. Remove from pan.
Add celery, carrots and onion to the same pan; cook and stir 3-4 minutes or until tender. Add turnips, sweet potato and garlic; cook 1 minute longer.
Add wine, stirring to loosen browned bits from pan. Stir in broth, vinegar and herbs. Return roast to pan; bring to a boil. Bake, covered, 2-1/2 to 3 hours or until meat is tender.
Remove beef and vegetables; keep warm. Discard herbs from cooking juices; skim fat. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir 2 minutes or until thickened.

Beef Pot Roast

Beef Pot Roast with Vegetables And Herbs

Ingredients

1 (2 to 3-lb.) boneless beef chuck roast
9 small red potatoes, halved (about 1 1/4 lb.)
1 1/2cups fresh baby carrots
8 oz. fresh green beans, trimmed
1 red onion, cut into wedges
1 1/2 teaspoons beef-flavor instant bouillon
1 teaspoon dried marjoram leaves
1teaspoon dried thyme leaves
1teaspoon dried oregano leaves
1/2teaspoon garlic powder
1/2teaspoon salt
1/4teaspoon coarse ground black pepper
1/2cup water

Steps

1. Heat oven to 350°F. Arrange roast and all vegetables in ungreased 13×9-inch (3-quart) baking dish. Sprinkle with all remaining ingredients except water. Pour water over top. Cover with foil.

2. Bake at 350°F. for 2 to 2 1/2 hours or until beef and vegetables are tender. Serve with pan juices.

Pennsylvania Pot Pie

Ingredients

Chuck Roast

Potatoes- peeled and cut into large chunks
Carrots- peeled and cut into baby carrot size (baby carrots work with this recipe also)
Onions- peeled and sliced into larger size slices or chunks
(for the potatoes, carrots, and onions, size of family determines the amount you want there is no wrong amount)
Flour
Water
5 Garlic cloves chopped
Salt
Pepper
Directions
In a Large Pot on high heat, coat the bottom of the pot with oil.
Add garlic and brown
Take the Chuck Roast and pan sear each side
Turn heat down to medium and add enough water (and then some) to cover the roast.  Cover and cook 5-6 hours depending on size. You will know when the roast is done when it literally falls apart. You may need to add more water throughout the cooking time to keep roast submerged in the water. You can add salt and pepper.
About 2 hours before the roast is done add potatoes, carrots, and onions.
About 30 minutes before everything is done you will make the “noodles”
Using a bowl, mix 1 cup of flour and 1 cup of the water from the pot. The consistency will be thick and sticky.
You can roll out the dough and cut into strips or you can flatten using your hands and drop the noodles into the pot. Allow to cook at least 15 minutes. (I usually double the noodles because my family enjoys them).
Serve with French Bread and enjoy!
